    Caffeine release process: SUGAR CANE DECAF
    This is a process based on ethyl acetate (EA). EA is produced naturally by fermentation of molasses obtained from sugar cane. Then acetic acid is added and the coffee beans are soaked in the resulting mixture. The coffee beans are soaked in water with EA. EA extracts caffeine without affecting the coffee's taste too much. When the desired caffeine level is reached, the beans are brewed to remove the EA.
    Sugarcane is readily available in Colombia, which makes great economic sense to use this resource as a complement to the coffee industry.
